The overall objective of this project is to promote the consumption of Asian catfish (Clarias species) on Guam to all segments of the general, non-tourist market.
- Educate consumers about Asian catfish in order to expand the market for the product on Guam.
- Conduct preliminary market research, including surveys of consumers at cooking demonstrations to learn their acceptance of catfish and to estimate the size of the potential market.
- Investigate partial mechanization of processing Asian catfish.
